Overall I think it went pretty well. I'm used to commuting by public transit, but having to think of three things I'm grateful everyday was really uplifting. I also went through a bunch of the stuff I didn't need at my house. I also saved money trying to decide if they were things I needed or wanted. Honestly, the Vegan thing was the hardest for me. My roommate also participated eating vegan with me, we definitely ordered a meat lovers pizza last night. Haha. It's not a lifestyle that I could keep up with, but it was eyeopening about how many things contain meat or dairy that I have never thought about before.

I am thankful for this experience, all the time I spent organizing for winter, and for the meat lovers pizza I'm ordering for dinner tonight. <3

I never realized how many things have milk in them until I started reading packages. I'm staying strong though!

What are the implications of access to nutritious food for a community?

Overall I believe it has to do with caring about the health of these communities. Food deserts are usually in urban low income areas and people do not have the access to fresh nutritious food or they cannot afford to purchase these foods. Giving people access to either stores that have these products or even using urban gardening and teaching people how to grow their own food are both actions that I have seen being  taken in the south side of Chicago. The pricing is the issue though, they placed a whole foods in the Englewood neighborhood, but it's so overpriced that it isn't really helping the situation.

What do you think contributes to people in North America eating more meat than in other places, and what does this say about North American values and ways of living? How do we start shifting a meat-focused food culture?

I mostly think that it is a cultural thing. I grew up in the midwest and every meal had meat, potatoes, and a vegetable. With growing up with that and people not being exposed to diverse diets or food I think they become a bit closed minded. I am really excited to try eating strictly vegan for a few weeks. I have previously worked at a vegan focused restaurant, but I never cut dairy and everything completely from my diet.

How can you prevent yourself from accumulating more things in the future?

Start thinking before purchasing items, start having a need vs want mentality. Going through my items and donating items in good conditions to local shelters.
