    Today has gone well in terms of each of the challenges, I've eaten 3 of my 4 fruit/veggie servings so I definitely expect to meet the 4 servings at dinner. I also woke up earlier than usual accidentally and so I had plenty of time to meditate in the morning.

    What do you think contributes to people in North America eating more meat than any other places, and what does this say about North American values and ways of living? How can we start shifting from a meat-focused food culture to a more plant-based one?

    I think that eating meat became more deeply ingrained in our culture than other places, and also that we have very powerful corporations for industries that make/sell meat and animal products.. I think this says that corporate interests have done a lot to shape our culture/change our lifestyles to drive need for their product, which is pretty alarming.
    One thing that I think would help us shift to be a less meat-focused food culture, for men, particularly, would be to change the narratives around meat/vegetable consumption and gender/sexuality norms. For instance that eating meat is "manly" and being a vegetarian is "wimpy," etc.

    I did find it easier to get meditation done this morning, partly because my roommate is out of town, so I didn't starting thinking about needing to start getting ready/competition for the shower/sink space, etc., and partly because my cat was quiet this morning. 
    If I didn't enjoy doing the mini mindfulness meditation in the morning, I would switch to doing it in the evenings, which would be more convenient and feel more private and unrushed. Maybe I could compromise by doing it in the evenings on days where I didn't get it done in the mornings.

    Met all my goals today, or rather I anticipate doing so, as I haven't had dinner yet. I do know what I'm going to be eating though, and although I'm not sure of the exact quantities of the vegetables in them, I know that the dishes (vegetarian Indian food) heavily feature vegetables!

    Another obstacle I've been having, specifically related to the eating more fruits and vegetables is that there aren't always veggie options that I like, and the fruit options are generally always the same thing every day. I don't have time or money to shop for additional produce, so I just have to work with what's offered. In some ways eating more fruit and veggies this way is easier because I don't have to do any prep, but at the same time it's harder because I don't have control over what's available/served.

    Today went pretty well! I had some extra time in the morning, and had plenty of vegetables that I liked on hand to eat today, so it was easy to add on the extra servings!

    Today's challenges went alright, other than meditation, which I skipped partly because my cat wouldn't stop meowing for me to get up and feed him, and partly because I overslept and wanted to start getting ready for the day. I think that setting my challenge to be meditating in the morning makes it more difficult to follow through unless I wake up early or on time, and even then I often get distracted by my phone, or my cat won't stop meowing at me to pet him, and if I ignore him his meowing will wake up my roommate. Yet, I find it much, much harder to make myself sit still and meditate for even a few minutes when I'm in the middle of my day, compared to when I'm waking up and my mind is clearer. So I'm still not sure whether my planned for the meditation challenge could be more ideal or not.

    Not very successful today, as I ate breakfast on the go with no opportunities for fruit and/or vegetables, and when I woke up  I procrastinated sitting up and doing meditation until the point where I had not enough time to do it. My brain and my current habits seem to be actively putting up a fight against these new ones. Hopefully the vinaigrette in the dining hall will be restocked soon because then I'll be eating more salad, and at least be able to meet the fruit and veggie goal.

    I didn't end up eating all the servings of fruit and vegetables, partly because I missed full lunch, and had to eat protein bar on-the-go. I ended up eating mindfully during breakfast mainly because I didn't have time to eat at a leisurely pace, and I knew if I browsed my phone or listened to something then I would eat slower. This would be something I could try to replicate for my distraction-free meals in the future in mornings, when I usually have the least time to eat.

    Today I only ended up meeting one of my challenge goals, the fruits and veggies one.
    Yesterday, I met the fruit and veggies one and the meditation one.
    Both days I missed the eat mindfully challenge. Partly because both days I had to eat one of my meals "one the go" , and it makes it feel "easier" to let one of my meals be without distractions when I know there are three sit-down meal opportunities. Overall it's proving to be the most difficult of the three so far.
