Wow- this challenge flew by! I have found these really easy to incorporate so I plan on continuing on a permanent basis, as well as researching additional ways I can be more eco-conscious.

Kinda bummed out that many teammates seem to have forgotten about the challenge. Maybe next year!

Hosting a birthday party for my soon to be 14 year old and am refusing to use "disposable" plates, cups, and flatware. Hopefully it will be a teaching moment for these teenagers (and not embarrass her too much!).

Today is pouring rain so I have a ton of receptacles out there to catch the rainfall for future watering in my garden.

Challenge really got derailed today with the onset of EPIC. Single serving packaging and plastic bottles EVERY WHERE. Ugh. Didn't cause a problem for me but I felt really negative about all the one time use disposable packaging being thrown out. :(

The challenge went really well this weekend. I was unpleasantly surprised how many people I invited did not accept the challenge, though. It really isn't hard and you only are challenging yourself. Makes me wonder why people would decline to educate and challenge themselves to live a more sustainable lifestyle. Thoughts?

I feel the same way. I invited most of my colleagues and only 1 accepted. I look forward to this each October. It really opens your eyes to helping out our environment and planet!

My challenges are going well for the work week. We will see how much the whole foods challenge slides through the weekend! ;)

Food Try a New Way to Prep
Canning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA. What are some foods that you would like to preserve and enjoy later in the year?

I have many okra plants that are still producing so I have been pickling them and chopping and freezing them so I will continue to be able to use them in the colder months.

    Health More Fruits and Veggies
What do you think contributes to people in North America eating more meat than any other places, and what does this say about North American values and ways of living? How can we start shifting from a meat-focused food culture to a more plant-based one?

I am vegan and have been for years. I have started to educate people about the value of a plant based diet and have converted many family members to being vegan. I think education is the best way to convince people to eat a plant based diet. As they say, if you can't stand to watch it be produced, you shouldn't be eating it. I know a lot of people do not know about the damage a meat eating society causes- to the environment, to our physical health, and to the 56 BILLION animals slaughtered in the name of meals every year.
