    I wasn't as active in the EcoChallenge this year, but am happy to reflect that this past year has included a number of daily/weekly habits regarding Food Resources that are now just a part of my day-to-day life. Every Sunday, Joe and I buy our food for the week at our neighborhood New Seasons. We buy all organic fruits, vegetables and lean meat. We've greatly reduced the packaged foods we buy to just a few irresistible favorites (Juanitas chips, salsa and coffee to name a few.) We meal prep our lunches and dinners for the entire week. Lunches are typically a salad and dinners are typically a soup or stew. We rarely tire of the same thing, so this has worked very well for us. We have also learned to build in a little flexibility by prepping about 4 meals each week, as opposed to five. This allows room for the occasional lunch-&-learn or weekday night out. By prepping our food, we have nearly eliminated our food waste. All scraps go to compost and we save and reuse the few containers we do buy. The routine has become an enjoyable part of our week. We're eating healthier and saving money. Good changes all around. :)
