I think the second factor is that as North Americans, we celebrate and embrace excess in so many aspects of our lives, that it ties in with eating big meals and lots of meat, almost as s strange sort of status symbol. Think how popular the show Man vs Food was and still is.

Eric Kelly 10/11/2018 5:15 PM3 things I'm thankful for today 10/11
1) All the pumpkin flavored food products being sold this time of year (ice cream, yogurt, ect...)
2) Our mulching lawn mower. You'd understand if you saw the amount of leaves in my yard.
3) The silly antics of my dog Sullivan. -
Eric Kelly 10/11/2018 4:10 PMIn response to how my eating vegan mesls, it's about the same frequency as last year. I eat a lot of spinach salads that I add fruit, feta cheese, and walnuts to. There are a couple really good organic vegan tv dinners that I like. One is s butternut squash that's really good. I make homemade brocolli cheese soup pretty often. Its going well.-

REFLECTION QUESTIONHealth More Fruits and VeggiesWhat do you think contributes to people in North America eating more meat than any other places, and what does this say about North American values and ways of living? How can we start shifting from a meat-focused food culture to a more plant-based one?
Eric Kelly 10/10/2018 6:04 PMI think there are a couple factors that contribute to North Americans eating more meat than anywhere else in the world. I think it is so engrained in our nature and has just been such a staple of our diets for so long that it is difficult to change.
I think the second factor is that as North Americans, we celebrate and embrace excess in so many aspects of our lives, that it ties in with eating big meals and lots of meat, almost as s strange sort of status symbol. Think how popular the show Man vs Food was and still is.-
Bethany Gangestad-Birk 10/11/2018 12:37 PMSince the last Ecochallenge, when you worked on eating vegetarian and/or vegan meals, would you say you have started consuming less meat in your diet? Or has it stayed the same or increased?

REFLECTION QUESTIONHealth HappinessHow does/can practicing gratitude keep you centered and motivated to work for a better world?
Eric Kelly 10/09/2018 1:45 PMBy focusing on what you are grateful for I think we live in that moment and don't focus on the future and potential stressors of catastrophic thinking. -
Eric Kelly 10/08/2018 1:55 PMThree things that I am grateful for today. 1) The joy and good feeling I get from working my job at ABC and trying to make just a small difference in people's lives. 2) College football season (Go Hawkeyes!). 3) The love and patience shown me by my wife, without whose help I could barely dress myself in the morning. :)-
