    Vegan living is easy and better for my body.  It's unfortunate that I got sick early, had an infection, had to deal with transportation stress, might have dislodged a rib, and had other stressors during the 3 week challenge.  It's not how I would like to "turn vegan" in my life, so while I plan to remain 95% vegan, I will have dairy and eggs from time to time until I can fully go vegan on a happier note.  :-)  I'm really going to watch how my body reacts to dairy, especially in terms of migraines and overall comfort.

    Eating organic carrots even though I'm not hungry (just to take my medicine) and after a few carrots, I absent-mindedly poured some ranch dressing to help the carrots go down.  I just put the bottle back in the fridge when I realized, "This isn't vegan!" and flushed it down the drain.  SO, even though it's nearly been 2 weeks, my mind has not totally been on board.  Being sick and just annoyed by other circumstances don't help.  I need some calm / zen in my life to make a switch.  SO, what I guess I'm saying is that I will not be sticking with the vegan thing just yet BUT I will definitely be leaning towards a more vegan diet because I believe dairy does not do this girl's body or head good.  Small amounts only.

    Just a few more days in the challenge and I'm really trying to figure out what to do when it's done.  Go off the vegan diet just long enough to satisfy some cravings and say goodbye to foods?  Continue with the vegan way?  Go back to being mostly vegetarian with a lean towards vegan?  Time for a documentary!

    Sorta made the Instant Pot burrito bowl and it was a mild disaster. Tasted okay but quinoa was wetter than expected and didn’t have all the toppings.  Take two in a week or two.

    Thank goodness it's Friday!  This has been one of the longest weeks for me.  Being sick with such beautiful weather STINKS!  I can't wait to feel better so I can get back on track with eating better.  It's sad that when you're sick, you tend to eat foods that are bad for you or want junk foods.  At least that's clearly how I am.  I felt great at the start of this challenge and I just wanted good wholesome organic vegan food.  Now that I've been sick for over a week, I want cheese pizza, a Helvetia Tavern gardenburger with all the toppings, nachos, and cheese enchiladas.

    Is it wrong that as soon as the challenge is over that I want to go back to being an ovo-lacto vegetarian just long enough so I can enjoy my birthday freebies like an ice cream scoop here, a frozen yogurt there, etc., finish off some foods that I forgot I have and because my father just sent a care package that contained Wunderbar candy bars from Canada?  Being sick, developing an unrelated infection, and not having my favorite comfort or junk foods is really getting to me.  It's been a LONG week.

      You shouldn't limit yourself too much; its great to have goals but being sick, in my opinion, is a rule breaker ;)

    Can organic farming feed the world? Which side of the argument do you fall on? Why?

    I'm a libra, so I always seem to see both sides and I can HOPE that organic farming can feed the world but there are so many variables out there that I just don't know if it can.  As we know, we don't always do what's best for us.  We do what's easier, cheaper, faster, and just more convenient for us.

    Michael Pollan states that "it is better to pay the grocer (our edit: or the farmer!) than the doctor." Well of course....how many times have you heard of a life changing medical event changing someone's diet?  Many times, it's a plant-based diet.  Hmmm.......why don't we skip the heart attack and go straight to healthier eating?  Oh yeh....junk food tastes good.  I'm totally guilty of eating lots of junk food, soda, and other things bad for me.  But I was a junk food vegetarian and am finally making the turn to a more organic and whole food diet (mostly thanks to this challenge).  Even though I managed to catch a cold, I'm not backing down and know that my current diet is for the best.  I recently learned I have a family history or high blood pressure, high cholesterol, and stomach cancer!  I don't want to see doctors for those conditions.  I want to eat better and avoid those doctors entirely.

    Got a favorite quinoa recipe?  Looking for some unique vegan recipes and I have NEVER made quinoa to date!  I still have the burrito bowl that I intend to make (and thank goodness for Instant Pots!), but if you were just making quinoa all by itself, how do you do it?  Can you do it in a rice cooker?  I hear adding broth instead of water is a good idea but how much?

      I just replace all of the water with broth and it works pretty well. If you have a favorite rice pilaf recipe, you might try substituting the quinoa for the rice in that. I do sort of a moraccan pilaf with warm spices like cinnamon and cumin, caramelized onions, slivered almonds, and dried fruits. And now I am thinking i need to make that - yum!
