Jamie Lomax 10/17/2018 11:46 AMThis we are better at... While we are still de-cluttering our space, we are very selective about the things that we bring into it. We shop a lot less than we used to, and try to buy second hand, or find on our local Buy Nothing group when we can. The biggest thing to overcome for me is how to accumulate less craft supplies, as I upcycle materials and sew a lot. Sometimes this leads to a pretty large stack of materials in the dining room, but since the products I make are sold through my Etsy shop, the clutter doesn't stay there forever. -
REFLECTION QUESTIONHealth Avoid refined sugarBefore you started this challenge, did you think you were 'addicted' to sugar? How do you feel now?
Jamie Lomax 10/17/2018 11:44 AMI did not feel addicted to sugar, but I noticed that I had small amounts that added up through the day. This came in the form of snacks on the community table at work, single bites of chocolate after lunch, etc. The first step I wanted to take was to eliminate sugar in my beverages, so even though I mostly drink black coffee, I began to eliminate occasional chai lattes and sweat cream in my cold brew. It's a much better way to taste the true flavor of the coffee.-

REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Jamie Lomax 10/17/2018 11:41 AMI love this! We used to compost our vegetable scraps, but it seemed like a waste. So I found a recipe on Pinterest to make your own vegetable stock out of veggie scraps. It's so easy - place the veggies in a pot, add some herbs/spices, boil and simmer, and strain. Then we can freeze the stock in large mason jars in the fridge, to pull out and use later for soups and other meals.-
Stacy Strickland 10/18/2018 1:22 PMI've found that carrot tops make a good chimichurri and radish greens are good in salad. I just heard about a banana bread made with banana peels... I'll let you know if I try it!
