    one more day! But this is just the beginning. There is a lot of work to do to restore our planet to health!

    Tip for conserving energy: plan all your baking together so you maximize the use of the oven. I only use the oven on cold days, when any extra heat will just help with heating the house. Yesterday, I baked sweet potatoes and squash and the seeds all at the same time so I only needed to use the oven for an hour. Also, you can turn off the oven and leave the door closed about 10 minutes prior to finally cooking time to use ALL the residual heat.

    What is your biggest "eco-vice"? Mine is long, hot showers. With winter pretty much here in the North Woods, sometimes the only way I can get warm is to take a steamy shower, and getting out is SOOOOO hard!

    Out of sight, out of mind. When we "throw things away" it is easy to imagine that they actually go away. In reality, much of it never will. It will sit in a landfill for hundreds or thousands of years, or float in the oceans, or be eaten by birds/fish who will then starve to death as a result. But without a visible impact, we can forget this and take the easy way out instead.

    What concerns me most is the LACK of concern from many people in power. Politicians and corporate officials only care about making money, and will do this at great expense to the environment. Animal agriculture is a horrific example, hurting earth, animals, and starving people around the world.

    Canning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA. What are some foods that you would like to preserve and enjoy later in the year?

    It is great to preserve surplus veggies from harvest season so that I don't have to resort to store bought options or fresh foods that have been shipped from warmer climes. This helps to reduce my carbon footprint.

    I am against man-made chemicals being used on any plants! These chemicals can be dangerous, and there is no way of us knowing the long term impacts. They may be- or are certainly- harmful to our health and the health of our Earth. Always organic.

    I am vegan, which reduces my carbon footprint AND saves animals' lives. It is better for my health, as well!

    Bringing the power back to small farms and the general population instead of corporations. This will allow us to determine the direction we want to see agriculture take, instead of allowing it to be fueled by greed and a thirst for power.

    When I practice gratitude, it reminds me that restoration and peace in the troubled world are not hopeless goals. It keeps me focused on all that is good and worth working for!
