    What do you think contributes to people in North America eating more meat than in other places, and what does this say about North American values and ways of living? How do we start shifting a meat-focused food culture?

    I am hopeful that our culture is starting to shift away from meat being the center of a meal, and focusing more on eating more fresh fruits and vegetables. I do think that our society is very stressed and busy, and this leads us to eat foods that are faster and require less preparation. Often time this ends up with a lot of meat (fast food, for example). I notice that when I have more time, I eat less meat and more fresh foods because I have time to take care of my body.

    This weekend I visited the Oregon Coast and witnessed the moon setting into the ocean - something I didn't even realize was possible! I am trying to celebrate the natural world around me as much as possible. To me, the first step is taking time to step outside and just witness the changes around us.

    I decided to make this month an all-vegetarian month for me. I usually eat meat about 1-2 times per week, but I just read that Westerner's consumption of animal products is responsible for one-fifth of global emissions. I love a good cheeseburger, but to me it's not worth risking the future of our planet. If you see me, ask me how it's going! :)
