Laura Powers 10/18/2018 10:23 AMI am hopeful that our culture is starting to shift away from meat being the center of a meal, and focusing more on eating more fresh fruits and vegetables. I do think that our society is very stressed and busy, and this leads us to eat foods that are faster and require less preparation. Often time this ends up with a lot of meat (fast food, for example). I notice that when I have more time, I eat less meat and more fresh foods because I have time to take care of my body. -

Laura Powers 10/15/2018 9:19 AMThis weekend I visited the Oregon Coast and witnessed the moon setting into the ocean - something I didn't even realize was possible! I am trying to celebrate the natural world around me as much as possible. To me, the first step is taking time to step outside and just witness the changes around us. -
Laura Powers 10/08/2018 10:39 AMI decided to make this month an all-vegetarian month for me. I usually eat meat about 1-2 times per week, but I just read that Westerner's consumption of animal products is responsible for one-fifth of global emissions. I love a good cheeseburger, but to me it's not worth risking the future of our planet. If you see me, ask me how it's going! :)
