Rebecka Anderson 10/19/2018 11:57 AMMy challenges have been going really good. I turned an empty food jar into a lady bug habitat and have been finding creative ways not to waste thing. I have been freezing any food scraps that I don't use for cooking and have been adding them to my boyfriends compost. I have been spending my early mornings warming my car up and enjoying the beautiful sunrise every day and it sets a wonderful tone to the beginning of my day. Taking quick 5 min showers has been nice. Sometimes my water has to warm up so I fill my watering can with the cold water and water my plants with it so that the water doesn't go to waste. I have been bringing healthy snacks to work everyday like carrots, strawberries and celery, it's been a nice change and I am noticing that when I do have access sugars from candy or things like that my body reflects this in how I feel. I got a gym membership and have been really enjoying working out and they also have massage chairs that help my back. I am really proud of myself for making changes in my life that I am already seeing have a great positive impact on my life. Even though I have a long way to go on many things starting these small steps has helped a lot in going the direction I want for my future. -

Rebecka Anderson 10/12/2018 7:06 AMI take a walk on every break at work and it helps a lot with de-stressing. I also Love to go for walks after work. We are surrounded by beauty and it always helps me remember how much I appreciate the small stuff. -
Rebecka Anderson 10/10/2018 8:20 AMI have been wanting to make some positive changes in my life and love this challenge. It helps motivate me to follow through and keep pushing myself and my goals. Today I am signing up at the gym and adding a personal challenge of working out 3 days a week. During the winter I get really restless and I feel like this will help me a lot with that. -

How can we start shifting from a meat-focused food culture to a more plant-based one?
Rebecka Anderson 10/10/2018 8:18 AMI feel like we see a meal as the main dish being the meat. A lot of people don't know that your piece of meat shouldn't be larger then your palm. A lot of it has to do with education in cooking as well. It's common to have just a small side or two and a large meat to take up most of the meal. I grew up with a lot of cooks in my family and we still used quite a bit of meat. There are a lot of great substitutes to add to a meal to get all the nutrients and vitamins you need and I feel like we are taught that a meal consists of a large portion of meant and small sides. We are taught this and practice it instead of being taught to eat healthy. I have gotten into cooking very tasty and healthy meals. Its a misconception that if you are eating healthy it's not going to taste very good.
