I am turning my large garden into a small garden and building a native prairie on the other half of my garden. I am doing this in an attempt to attract many bees.

I would say clean water and bee health are the most pressing issues.

This has been a bad week! I was off from work part of last week and am now playing catch up...so I have been hardly been able to take the time to breathe, let alone be mindful of anything! hopefully I can get back on track soon.

I chose to be in this challenge because sometimes my life just gets too hectic and I feel like I can never relax because there is always something else that needs to be done! I really need to learn how to relax and be mindful. Even when I relax now, I am always thinking about what I need to do next.
  • REFLECTION QUESTION
    Simplicity Work-Life Balance
Is practicing work-life balance difficult to do? How does it feel when you first begin? How does this feel for you after 21 days?

Some days it is much easier than others. Many times I go to work thinking I am going to take my breaks and meditate...but then the phone rings or my computer calls out to me. I just took a few days off, so coming back and trying to catch up is difficult. Once I get things evened out again, it will be much easier to try and maintain the work/life balance.

What do you think contributes to people in North America eating more meat than in other places, and what does this say about North American values and ways of living? How do we start shifting a meat-focused food culture?

I believe it would be a lot easier to maintain a meat free diet if more restaurants in the area provided meat free options. It is very difficult finding restaurants and bakeries that have a good variety of vegetarian or vegan options.

    Health More Fruits and Veggies
What do you think contributes to people in North America eating more meat than any other places, and what does this say about North American values and ways of living? How can we start shifting from a meat-focused food culture to a more plant-based one?

I think we eat so much meat because that is how we were raised. We live in a community that is rich in farming and hunting. I also believe it is because our country is wealthier than many other countries. A good start to shifting from meat focused to more plant focused is to plan on eating a few vegetarian/vegan meals each week. I also have a large garden and can or freeze a lot of the produce for winter.

How does/can practicing gratitude keep you centered and motivated to work for a better world?

I believe the more you practice gratitude, the more you can change the well being of others. People feed off your energy, whether it is positive or negative. If more people have positive energy and outlooks, the happier and more content people will be.

If you were to only eat what is in season locally, what would be the hardest for you to give up?

The in season fruit or vegetable that I look forward to the most is sweet corn. It may not provide the most nutrients...but it sure is tasty! Granted, I do not eat a lot of sweet corn throughout the year...so my second choice is lettuce.
