Tim Bender 10/24/2018 8:23 AMAfter watching all of the Chefs Table documentaries (multiple times) obsessively, I have been able to relate all of them back to being an integral part of the bridge between agri-business and modern food business systems. These Chefs build their whole business around what's happening with their local farms, or even their own restaurant farm. Its fascinating to think about where it will be in ten years if we are already at this point! -
Tim Bender 10/10/2018 1:50 PMIt was a no brainer to join this challenge. All of the different actions embody what i try to observe in my daily life at home and at work. I am the Chef at a social enterprise restaurant that gives a platform to underserved community members in order for them to launch their own food related business. It is essentially a real time training program that gives them restaurant and catering experience. I try to incorporate alot of the Slow Food values that I have embraced into their training.-

We are in Denver CO in the RiNo arts district. Our building was once an old Taxi headquarters that has been re purposed into a business and residential complex! Many of our participants have been affected by the gentrification of this neighborhood, so it is awesome to be able to help them out by giving them opportunity. Although very challenging on many fronts, this is by far the most rewarding project I have been involved with as a Chef! -
Monica Martin 10/11/2018 8:46 AMThis is so lovely! Where is your restaurant? I'd love to visit. I wrote a paper on this concept when I was in school studying dietetics. I'm a big fan! I once owned a social enterprise business and found it to be so rewarding. And challenging at times.....

People need to realize that GMOs are not good even though they yield a ridiculous amount of product for cheap. This "cheap" product will only lead to more health complications that can be avoided by eating natural and organic, vitamin rich produce-
