    I have enjoyed the challenge; it has helped me become aware of amount of meat I consume.  It has also helped me see that I eat many locally sourced meals.  I have been baking my own bread and trying new recipes with spices and herbs.  My next personal goal is to eat no more than one meal a day with meat and then reduce the numbers of times I eat meat during a week.  I need to develop more recipes.  I am relying on things I know that are quick and easy and many contain meat.  I also need to work with the people in my household on meal coordination.  It would be better to agree on meatless days, rather than having very disappointed people.  Feeling inspired.

    I am not certain.  I do not yet fully understand all the energy and resources required to create from farm to plate.  Less meat is always a safe choice.

    What do you think contributes to people in North America eating more meat than in other places, and what does this say about North American values and ways of living? How do we start shifting a meat-focused food culture?

    Availability of meat at a low cost created the increase in consumption.  Unfortunately, the quality is not always there with mass production.  Plus, there is a cost to the living creatures; they do not have a wonderful life.  Being mindful and expressing gratitude for their sacrifices would help reduce consumption.  It would be helpful if we created recipes that are delicious and do not rely upon meat for texture, taste, and scent.  Learning about spices can change the world.

    If you are healthy - absolutely!  Perhaps people can also grow there own food. Very therapeutic to work with soil, sunshine, and water.  A small window garden can help decrease stress and provide some lovely herbs.   If not interested in growing some items, then a trip to a farmer's market is a feast for the senses.  Plenty to see and do and taste.   I love gardening and grow many of the food I enjoy.  I canned some grape
    juice last night and it is ready to store as beautiful liquid sunshine over the winter.

    If you were to only eat what is in season locally, what would be the hardest for you to give up?

    The first thing that came to mind was potato chips.  I would need to make sure my root cellar was stocked with enough potatoes to overt a crisis.  The other item I would miss would be citrus.  I am going to see if I can grow lemons indoors this year.

    I am enjoying the local, fresh, organic foods of fall.  I will be making Leek and Potato Soup tonight.  Wish me luck - never tried cooking with leeks before.
