Reflection QuestionFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Sarah Irwin 10/22/2018 3:13 PMI feed the ends of cucumbers, carrots, zucchini, etc., to my dogs. They eat almost any fruit and vegetable. for other bits, I keep a ziploc in the freezer for this. When it's full I make vegetable broth-
ashley alred 10/22/2018 3:36 PMThat's too funny! I know a lot of people that feed leftover veggies to their chickens :)
