REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Maya Jackson-Gibson 10/07/2018 7:14 AMI think that a lot of skin on vegetables don't really need to be removed if you wah them properly. So I try to incorporate them a lot in my cooking at add color and flavor. For the pieces of the vegetables that I don't use, I participate in a composting service that will take my biodegradable waste away on a weekly basis so it can be converted into mulch/fertilizer for future growing.
