I think that a lot of skin on vegetables don't really need to be removed if you wah them properly. So I try to incorporate them a lot in my cooking at add color and flavor. For the pieces of the vegetables that I don't use, I participate in a composting service that will take my biodegradable waste away on a weekly basis so it can be converted into mulch/fertilizer for future growing.
