This challenge is helping me be more mindful of my actions and how they impact others/animals/the environment. I've started passing on some of the reminders to my kids and they have started getting into a routine of shutting of lights/electronics when they leave a room or the house. They turn the water off when they are brushing their teeth and don't let it run when not using it during doing dishes. They've even started thinking about food waste. We have fruit trees and they have been feeling sad about the wasted fruit that rots on the ground. -
Kim Jackson 10/08/2018 11:39 AMI took my kids on a walk on a trail near my house. I didn't realize it was there so it was a new experience to us. The leaves were so beautiful and the kids really loved it. -

How can we start shifting from a meat-focused food culture to a more plant-based one?
Kim Jackson 10/04/2018 6:23 AMI think wide open farmland and accessibility to resources such as water and food for livestock contributes to NA eating more meat. The industry started focusing more on large farms instead of smaller produce farms. Most suburban homes have yards large enough for gardens and I believe it's a good start if more people would grow some of their own food.

Kim Jackson 10/03/2018 12:31 PMI believe organic farming should be utilized world-wide. I know the benefits to using pesticides. I also know the dangers of pesticides. The dangers far outweigh the benefits. -
REFLECTION QUESTIONFood Weekly Meal PlanningAn average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?
Kim Jackson 10/03/2018 11:28 AMI have always had this as a goal, but this week I actually made two meals and then we had leftovers the next day. I made them in advance and I was super happy to not have to cook the whole meal when I got home from work. -
REFLECTION QUESTIONFood Whole Foods DietMichael Pollan states that "it is better to pay the grocer (our edit: or the farmer!) than the doctor." What are your thoughts on this?
Kim Jackson 9/26/2018 6:38 AMI made chili last night with all whole foods ingredients. It was so good. And I felt good about what I was feeding my family. The cilantro even came from my garden. I love to support locally grown food as well. I'd much rather have benefits upfront than to pay a doctor later on.-
