REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Kendall Keegan 10/04/2018 12:16 PMPotatoes, tomatoes and beans are examples of some good low-waste vegetables. There are some vegetables where waste is unavoidable like the skin of a kohlrabi, but with composting practices the amount of food waste entering the landfill can be reduced tremendously! Look into composting bins and vermiculture. This stuff is sustainability at its finest! -

Kendall Keegan 10/04/2018 12:13 PMWe already grow more than enough food to feed the world. The problems are distribution and waste. 1/3 of all food grown is wasted, another 1/3 is fed back to animals. -
