REFLECTION QUESTIONFood Smart Seafood ChoicesMany states and countries have advisories on eating fish. Find out what is advised for your region. Do you think your diet choices fall within these guidelines? What steps do you need to take to make sure that they do?
Nick Kelley 10/07/2018 11:30 AMLiving in the pacific northwest there are lots of amazing options for getting fresh fish to eat. Recently got some fantastic locally caught fish in Yachats - basically zero miles transportation and supporting a local business. Maybe next I'll go get some crab rings and see if I can catch some tasty crab for dinner :) -
Nick Kelley 10/07/2018 11:25 AMGetting the house ready for winter! making sure to keep the windows covered and fill any gaps to help reduce my electric usage - and save a few dollars :) -
REFLECTION QUESTIONFood Weekly Meal PlanningAn average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?
Nick Kelley 10/05/2018 10:03 AMWe have started to be more focused on using our leftovers, historically we have been those throwing out more food than I would like to admit. I do compost so most of our food does go back into the soil than a landfill, but it is also such a poor use of money. I'm not sure yet where I would rather use the money.... my first goal to is actually see if I can save it! :) -
Nick Kelley 10/05/2018 9:55 AMI love to hear the sound of rain in the trees! Went for a walk this morning with a warm cup of coffee and enjoying cool fall morning :) -

REFLECTION QUESTIONSimplicity Needs Vs. WantsHow is creativity necessary for practicing simplicity?
Nick Kelley 10/04/2018 8:14 AMWhat a great question! You truly need to be creative and go beyond the obvious options to simplify things in your life. Just like a simple food - unprocessed and local can help solve multiple of the current environment and health problems we face every day! -
Nick Kelley 10/04/2018 8:08 AMI love this time of the year! Fall has such a nice crisp feel in the air and the colors of everything changing :) -
