Cristina Mahon 10/22/2018 4:27 PMI was working to simplify my life overall and make sure I am making a positive impact on our world. That is both for a selfish reason (getting life under control) and maybe for a more unselfish reason of improving the world for my children and grandchildren. -
REFLECTION QUESTIONWater Install a Toilet Tank BankName some of the human activities impacting the health of water systems, both locally (your watershed) and globally (freshwater and oceans). What can you do to improve the health of water systems?
Cristina Mahon 10/22/2018 4:25 PMContinued growth in the Front Range. Farming/Cattle/Hog operations where pesticides and other items flow into rivers. Continued population growth at the world level. Controls on pollution can help as well as water conservation efforts. -
REFLECTION QUESTIONSimplicity Needs Vs. WantsHow is creativity necessary for practicing simplicity?
Cristina Mahon 10/22/2018 4:22 PMIn our world it seems that there is a constant expectation of more/faster. To actually be able to do things simply you have to remove the blinders on how things are always done and that requires creativity. -
REFLECTION QUESTIONSimplicity Eat MindfullyMindful eating is healthier for us than eating with distractions. How do your eating experiences differ when practicing mindfulness?
Cristina Mahon 10/22/2018 4:21 PMI get to enjoy and actually taste the food more. And I get to feel the texture of the food. It usually means I eat slower and my brain has a chance to catch up to my stomach and I know when I am full. -
REFLECTION QUESTIONSimplicity De-Clutter My HomeHow can you prevent yourself from accumulating more things in the future?
Cristina Mahon 10/22/2018 4:20 PMI have tried to implement an approach that if I buy something new, something else has to leave the house. I am also looking for opportunities to give what I have to those that can use it more. And, finally, I am looking at more experiences versus things as both gifts to others and for myself. -
REFLECTION QUESTIONHealth HappinessHow does/can practicing gratitude keep you centered and motivated to work for a better world?
Cristina Mahon 10/22/2018 4:18 PMIt lifts my mood and makes me look at the world around me to see the possibilities not the obstacles. It is particularly helpful when I think I have had a bad day. Doing this helps me see that actually it wasn't that bad of a day. -
REFLECTION QUESTIONFood Weekly Meal PlanningAn average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?
Cristina Mahon 10/17/2018 11:57 AMI tend to be pretty organized but weekly meal planning was not something I had done before. It started a bit rough with me forgetting some things and plans changing but overall it helps a great deal in making sure I am buying what I need and not just something that is right in front of me when I am grocery shopping while hungry. And it does save money as a side benefit.-
Cynthia Walker 10/17/2018 12:32 PMwe started doing this about a year ago and it really can save food waste, money, and time. not to mention less stress when we get home from work - we already know what the dinner plan is. i bought a magnet menu white board for the fridge. we fill it in Sunday morning with coffee and then I shop later for the week.

REFLECTION QUESTIONFood Join a Local CSADependable fresh food, better prices (cutting out carbon-heavy supply chain and grocery stores), supporting local farmers and building resilient communities are just a few benefits of local food systems. Which of these benefits (or others not listed here) inspire you the most?
Cristina Mahon 10/17/2018 11:52 AMI was inspired by the access to fresh food and being able to see where my food came from. To me it as also good to support the local farmer here. And an added benefit is that the food takes great. Still trying to figure out how to use all the different things I get as sometimes I haven't had experience with some of those vegetables. But it has been great doing this.
