Christine Rutan 10/24/2018 9:07 AMAll kinds of beans? What about chickpeas? They are a little firmer than others, and you can roast them with oil and spices to make a crunchy snack or salad/soup topping. Would hummus or refried beans work for them?

Christine Rutan 10/24/2018 9:01 AMIf you like tofu, baked tofu is super easy. Press water out of a block of firm or extra firm tofu, and slice into 3/4" slices (I usually get about 6 slices out of one block). Baste generously with a mixture of soy sauce and olive oil on all sides, and then bake at 350 for 50-60 minutes. No need to flip. Serve over rice or quinoa with sautéed greens or use in a sandwich. -

Jenna Garmon 10/23/2018 7:37 AMOne of my faves is roasted vegetables - very easy to make and you can pair it with so many side dishes. You basically cut up your favorite veggies (squash is great this time of year) into similar sized pieces, toss the veggies with oil and herbs, and roast in the oven. Yum!
