REFLECTION QUESTIONHealth Avoid refined sugarBefore you started this challenge, did you think you were 'addicted' to sugar? How do you feel now?
Paula Rigoli 10/03/2018 10:19 AMI don't think I was addicted to sugar, but I didn't really pay attention to how much I was consuming with processed foods. Since I've started carefully reading labels and avoiding any foods that are highly processed, I feel so much better. I find my energy levels to be stable throughout the day, I feel less blood sugar spikes, and I'm able to complete a morning run with about as much as the same energy level as an evening run. -
REFLECTION QUESTIONHealth More Fruits and VeggiesWhat do you think contributes to people in North America eating more meat than any other places, and what does this say about North American values and ways of living? How can we start shifting from a meat-focused food culture to a more plant-based one?
Paula Rigoli 10/03/2018 10:12 AMI think a confluence of factors have lead to increased meat consumption. First, I think it's a product of industry advertising and misinformation that encourages people to eat meat. North American's have a mental model that animal protein is a superior protein. It's also become very cheap and easy to obtain, and the average American doesn't really see the cost or impact of consuming meat.
Shifting from a meat-focused food culture to a plant-based one will require some community building and advocacy. I'm optimistic to see people like Beyonce and Jay-Z advocating for a plant-based vegan diet. I think the more people commit to it and live their values, then other people will see it's a viable way to live and we can hopefully start to gain some critical mass to tip North America from a meat-based food culture to a plant-based one. -

Just make sure to follow the canning and pickling guidelines from the USDA. What are some foods that you would like to preserve and enjoy later in the year?
