Arianna Struver 10/17/2018 7:54 PMFor my challenge, I choose to eat 3 meatless meals a day. This has been a task that has definitely made me feel challenged. I think this challenge is difficult because eating a meal without any meat in it requires a lot more planning and thought. As a college student, it is hard for me to make time to efficiently plan out what I am going to eat, so usually I go out to grab something quick. Doing this challenge, I have realized that most places that are quick and cheap have a lot of meat options. To successfully do this challenge, I realized very quickly that I would need to make and plan most of my meals. This in itself was challenging, but also making sure I do not include meat and make sure I get enough nutrients from other things made it extra hard.
