REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Emily Malaga Thompson 10/16/2018 2:11 PMKeep a glass container in the freezer for scraps to make stock. Or, feed to your chickens for extra nutritious eggs! ( is that cheating?) -
Emily Malaga Thompson 10/15/2018 10:41 AMMy biggest goal in this challenge is to help others in my household choose better products and avoid all plastics. There is so much that isn't being recycled now - even when it has the symbol and the code. Any ideas for helping teens that are only with you part-time to understand the importance? -
Emily Malaga Thompson 10/05/2018 12:25 PMThe autumn bounty of the Pacific Northwest sure makes creating waste-free meals a lot easier! Planning out my work snacks for the next few weeks (and beyond...). -
Emily Malaga Thompson 9/26/2018 9:10 AMlooking forward to this challenge again! A lot of things from last year's challenge really made a positive impact on the choices I make every day.
