    Well, it's been a ride!  I didn't exercise every day, which hurt my numbers, but I did exercise far more than 70 minutes per week, so on average I exceeded my modest 10 min per day goal on average.  
    I wish there had been a number of times per week other than 7 to make goals of.  I felt like I was cheating when I logged using a reusable mug on a day I was at home or brought my own coffee from home, but I did start bringing my own mug to the coffee shop when I did buy coffee, so I did save a few cups from hitting the landfill. Same general deal for single use containers and such.  Basically, my numbers for the amount of waste I diverted are severely inflated because of the way the challenge was set up.
    I am really glad I didn't choose the paper towel challenge because I would have failed very badly, but it did make me more aware every time I did use them. A future goal, perhaps?

    Getting easier.  Thinking of more possibilities.  How can I expand this to my family and my students?  Turned off the taps as I brushed my teeth. Looked  at the difference in water useage between baths and showers.  Need to change the washer in the kitchen tap so it doesn't drip.

    Probably the hardest is mindful eating.  Difficult to not read the newspaper or watch TV as I eat breakfast.  The best approach is actually to set and eat the table in the other room.  I turn my back on the TV when I am eating out at lunch.

    How can you incorporate other personal values (like quality time with friends or spending time in nature) into your exercise routine?

    During my walks, I look at my surroundings enjoying the  plants others have put into their gardens.  I stop to talk with neighbours if they are out and thank them for beautifying their gardens. When I take my walk at the university each day, I look at the students' faces - quietly smiling or saying hello.  The Media Arts and Production Faculty have painted a beautiful red piano and set it in the atrium walkway - I enjoy listening to those who share their musical talent.  Remembering when my hands worked well and I played similar music.

    Simplicity Eat Mindfully
    Mindful eating is healthier for us than eating with distractions. How do your eating experiences differ when practicing mindfulness?

    I start to focus on my food - tend to enjoy it more, presentation becomes important, and also tend to eat less because I am more aware of what is on the pates. When the electronics are shut off, we also talk to each other more.

    How does/can practicing gratitude keep you centered and motivated to work for a better world?

    It keeps me focused on present. I look for things to be grateful for - eyes to see, ears to hear, heart to feel, mind to think.  This is like the mind's paintbrush - I become less critical. I also look to to how I can change things for the better.  I also reflect on what many who have so little here still are happy.

    What do you think contributes to people in North America eating more meat than any other places, and what does this say about North American values and ways of living? How can we start shifting from a meat-focused food culture to a more plant-based one?

    Supersizing in restaurants.   Not knowing how to cook with plant based proteins. We have been shifting this past year.  Smaller portions of meat which I weigh or measure, found meatless recipes we liked to eat, planned meatless meals several times per week, tried new products from grocery store.  Stood on scales daily.

    So I *thought* I powered down my computer last night, but this morning I got a critically low battery message and haven't been able to power it on in 45 minutes. Karma is a bitch. On the plus side, good thing I didn't teach this morning.

    I will move back to eating meals at the dining room table to improve mindfulness.

    I don't actually probably only buy coffee or food other than groceries one or twice a week, so the reusable and disposable questions aren't really that tough.
