Allie Helgeson 10/04/2018 4:45 PMToday I had greek yogurt for breakfast, a pb and j for lunch, and pesto pasta with tofu for dinner. I did not go to the store as I am going home this weekend and do not want to buy anything I might not eat. I am just relying on the food I have at home. -

Allie Helgeson 10/03/2018 9:44 AMPersonally, I feel that when I focus on the good things it is easier to stay positive and look at the bright side. This way I am able to get over the negative things by knowing I have a lot to be grateful for. -
Allie Helgeson 10/03/2018 9:43 AMThis week I will be having pasta with pesto, baked tofu, and sauteed mushrooms. For snacks I have peanuts, rice cakes and peanut butter, and apples. For breakfast I have avocado and toast with an optional fried egg. I also have greek yogurt with berries and granola. I need to buy berries, granola, mushrooms, and avocado. I already have the other ingredients. This week will be relatively inexpensive as I am using ingredients in my pantry. -
Allie Helgeson 10/03/2018 9:39 AMToday I am grateful for the healthy breakfast I was able to afford and prepare this morning as not everyone is that fortunate. I am thankful for my roommates who give advice when needed. And I am happy that my studying paid off for my bio test as that was a large stressor tht has been lifted off my shoulders. -
REFLECTION QUESTIONFood Weekly Meal PlanningAn average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?
Allie Helgeson 10/03/2018 9:37 AMI am not surprised by this. Even I, a person who tries their best to only buy what they can eat, sometimes have difficulty eating all the food I prepared for that day. I only go grocery shopping when I have run out of ingredients for food to prepare. Many families go grocery shopping weekly and still have fresh produce or perishables left over from the previous week. Personally, I would use the money towards tuition, but I don't believe I waste that much a year. It is probably closer to $100-200 as I am very conservative.
