I think modern society automatically associates meat with each meal. I don't believe it's even a conscious decision - it is habit. I think eating steak for dinner is almost "American as apple pie."
How do we start shifting a meat-focused food culture? Education of health benefits presented in mainstream media. Also, find ways to make it easy to shift towards meatless meals. If it's not easy and tasty, I don't think the majority of North Americans will make that switch.

One of my friends told me a story about her Grandmother immigrating from Europe. And on the way over here on the boat, the crew served these people hamburgers and hot dogs. Her Grandmother explained that almost everyone threw it up or got sick in some way. The point is that eating meat is not necessarily terrible for us health wise. But the type of meat and the sheer quantity we eat on a daily basis has a snowball effect. Voting with your dollars is perhaps the only way to make large scale farming companies and the companies who buy from them to change. But as long as people are blissfully ignorant and see no evil, then nothing will change.
