    I can't believe its the end of the Eco Challenge already.  My family survived the meatless meals and were enlightened by watching documentaries about food.  The most successful meatless meal was the sweet potato crusted spinach quiche.  We also recommend watching the sriracha documentary on netflix.

    I regularly use some single-use food packaging, such as single-use hummus cups. I should try making my own hummus and buying small reusable containers that I could use instead of disposable ones. This would probably be healthier for me nutritionally, too!
