    Yes I truly believe that nature rejuvenates and inspires us to be our best selves. It puts things in perspective and reminds us that we are just one part of a holistic system

    Still traveling so much, it's hard to stay vegan! But I went to a typical diner this morning and the server was so nice! She had them make me a custom "hash' with potatoes and veggies and it was great! :-)

    I'm in Houston right now for a conference and it's hard to eat truly vegan! I've had to make some exceptions, but I'm still doing pretty good considering being surrounded by BBQ! :-)

    What do you think contributes to people in North America eating more meat than in other places, and what does this say about North American values and ways of living? How do we start shifting a meat-focused food culture?

    I think part of it is convenience. Meat is readily available in stores, fast food restaurants and it's a relatively cheap source of protein. i think a lot of the work to shift to a less meat centric society has to do with taking some of the glamour out of eating meat.

      Totally agree with you on this. Our society is geared around meat with meals, it makes it really hard to cut down or eliminate because most quick and easy meals contain meat!

      I think our US culture is based on convenience and evading responsibility.  We all know it's unethical and not healthy for us, but we'd rather have someone else take responsibility for our actions than us.  And when I say "us" I mean the majority of US Americans.  I, myself, am a long-term raw vegan.

    I used to go to a dance class every Sunday but I let it slide. i am excited to start going again and reconnection with that community.

    I feel like I'm cheating a little because my outdoor time, biking and exercise is kinda all wrapped into one. I think I'll make an effort to do them separately. Made Miso-coconut creamed kale with mushrooms and quinoa for dinner last night for my vegan challenge. It was delicious!

      That vegan dish sounds pretty amazing. I wouldn't feel too bad about outdoor time/biking/exercise, you could be riding a stationary bike within a gym instead.
