Austin and I made a beet salad, using all the parts including the stems and leaves, resulting in no waste. It was tasty with feta cheese, nuts, tumeric, oil and lemon juice. We also have gotten rid of all plastic bags and are using parchment paper.

I can avoid sugar all day until a beautiful piece of pumpkin cheesecake is placed in front of me...I can’t say “no!”

We explored Boulder Field in the Poconos and enjoyed an afternoon in the forest as a family.

I don’t think I was actually addicted to sugar, but I do crave chocolate. Giving it up for the challenge - and hopefully beyond - is a path to a healthier lifestyle.

It’s going well. I had to purchase some donuts at the grocery store, and I took my own tray, put the donuts on it, and paid for them, rather than have the plastic container. The cashier looked at me oddly, but I didn’t care. 1 less piece of plastic in our world.
